Highlands Bushfest 2023

Held in the historic Tasmanian town of Bothwell, the Highlands Bushfest celebrates and showcases the Central Highlands region of Tasmania, its heritage, culture and communities.

Now in it’s ninth year, the Highlands Bushfest is on Saturday 25th (9am to 5pm) and Sunday 26th November (9am to 3pm) 2023 at the Bothwell Recreation Ground, just 50 minutes from Hobart or 1hr 45 minutes from Launceston.

Highlands Bushfest features the unique outdoor pursuits of the region – fishing, hunting, camping, 4wd and other recreational and adventure activities.

It will also highlight food and beverage, tourism, arts and crafts, music and small business.

Join Dave Cann, founder of CLEAVER Salumi Cabinets, for an introductory demonstration of the art of salami making with game and wild-caught meats.

You can expect to dive into the basics of salami making. Explore tips and techniques on meat selection, preparation, process, salts, spices, maintaining the correct curing environment and an opportunity to ask questions and pick Dave's brain and experience.

Whether you're a beginner or looking to enhance your skills, this session is the perfect opportunity to kickstart your salami-making journey.
