Join Dave Cann, founder and owner of CLEAVER Salumi Cabinets, at our Narellan agent, Southern Highland Home Brewing for a an introductory demonstration into basics of whole muscle curing including salt boxing and EQ methods with capicola and pancetta.

Start your curing journey or expand your knowledge base with tips and techniques regarding meat selection, preparation, process, salting methods, spices, and maintain the correct curing environment.

They will also be an opportunity to ask questions and pick Dave’s brain and experience too.
